Feast & Souk at Capri this Ramadan

This Ramadan, Caprilicious, the all-day dining café in Capri by Fraser Johor Baru will feature a buffet spread of authentic Malaysian breaking-of-fast favourites and Middle Eastern cuisine in the theme, Feast & Souk.

Welcome to Feast & Souk at Caprilicious,
Capri by Fraser Johor Baru

In the New Normal, the hotel team will welcome guests into the restaurant according to the Standard Operating Procedures while posters displayed, remind guests to observe the Buffet Counter Etiquette.

In the restaurant foyer, guests may browse around a Souk, an Arabian night market or bazaar, and shop for festive specialties here.

Dressed in Middle Eastern costumes, hotel team members are wearing mandatory masks which aptly completed the ladies’ outfits with the charm of Middle Eastern modesty.

In the tradition of Ramadan buffets, a whole roasted lamb is being kept warm on a spit while culinary team members prepare whole fish to grill, Portuguese-style wrapped in strips of banana leaves.

Next to the sizzling grill, the buffet offers skewers of ready grilled beef and chicken satay served with condiments like ketupat rice cakes, raw sliced onions and cucumber to savour with a dollop of peanut sauce.

The live-cooking station in this al fresco section includes a Noodles Stop for a choice of noodles with accompanying condiments for Prawn Noodles and Laksa Johor.

Inside the restaurant, the spread continues in a central buffet line which allows diners to walk around comfortably to help themselves to desserts, appetizers, and a wide range of salad.

Breaking-of-fast staples include a range of juicy dried dates as well as beef and chicken serunding or spicy meat-floss to savour with lemang (glutinous rice steamed in bamboo) and ketupat (steamed rice cakes wrapped in coconut leaves).

Among the starters are salads, both tossed salads in a variety of kerabu and ingredients to assemble your own with local ulam-ulam and fresh greens to enjoy with a selection of salted fish and a choice of salad dressings and spicy dip sauces.

Presented with food labels, appetizing sauces like Chincalok, Budu, Sambal Belacan, Sambal Belacan with Pineapple and Sambal Belacan with Mango, are easy to identify.

The Sous Chef, Chef Mohd Mahathir explains that the main course items in the spread will be rotated daily so diners can enjoy a pleasant change in the menu even when they are breaking their fast at Caprilicious on consecutive days.

One of the mouth-watering main course items must be Lamb Dum Briyani where chunks of juicy lamb are cooked within long-grained rice for more flavour, and another highly recommended dish is a rich Rendang made with tender venison.

Some Middle Eastern dishes featured in the menu include Shish Tawook (chicken chunks grilled on skewers), tender Lamb Tagine, Falafel Chicken, Baharat (a Middle Eastern Spice Blend Striploin), Chicken Shawarma with condiments, and Couscous.

Besides French pastries, cakes and cookies, there is a variety of local kuih as well as Middle Eastern desserts to end your meal sweetly.

Middle Eastern dessert, Baklava

Be sure to have a taste of Umm Ali, a traditional bread pudding topped with raisins, Baklava, a layered pastry baked with honey, chopped nuts and pistachios, and Mahalabia, a milk pudding with a nougat-like texture.

Your feast could also end with a choice of fresh cut-fruits and a cool treat of shaved ice at the Snow Ice Station, created from the many ingredients provided and sweetened with your favourite syrups.
