DoubleTree
by Hilton Johor Baru offers two exciting breaking-of-fast buffets featuring
Festive Flavours at the Makan Kitchen and Feast@11th Ramadan at
level 11.
Culinary team [Left to Right], Chef Khairuddin, Chef Ong, Chef Rajendra and Chef Mahathir |
The
culinary team of Executive Sou Chef Ong Eng Kok, Sou Chef Khairuddin Aman Shah,
Indian Chef Rajendra Negi and Chef De Parte Mohd Mahathir Mohd Mokhtar, have
been working hard to design various menus to give diners a memorable dining
experience at not one, but two venues in the hotel.
At the
Makan Kitchen, which has earned an enviable reputation for the quality and
range of food in its Malay, Chinese, Indian and European kitchens, the wide buffet
spread will feature Malaysian and Middle Eastern specialties.
Malaysian
favourites include Lamb Briyani,
grilled whole lamb, Venison Rendang and
a range of local appetizers like Kerabu
Mangga Muda (young mango salad) and Kerabu
Aneka Laut (mixed seafood salad).

To add to
the festive feeling, traditional rice specialties like ketupat and lemang are
served with serunding (meat floss) and
kuah kacang (spicy peanut sauce).
And from
the Carvery, there is a whole roasted Harissa lamb to savour.
The
Malaysian experience continues with items like Tandoori Salmon Tikka and
Slipper Lobsters from the Indian Kitchen and Chilli Crabs and stir-fried
Marmite Prawns from the Chinese Kitchen.
Then indulge
in Middle Eastern cuisine from appetizers, main course items to desserts.
Selections from the Chinese and Indian Kitchens |
Start
with succulent dates, Lebanese and Pita breads with hummus, Baba Ganoush and
Fattoush Salad before enjoying main course items like Chicken Tzatziki and
Karouf Mashi (lamb with flavoured rice). Then end sweetly with assorted Baklava,
Um Ali Barbossa and Balah El Sham. Don’t miss Turkish ice-cream in a variety of
flavours.
Diners,
familiar with Makan Kitchen, will enjoy interesting selections from the various
kitchens here – from Malay, Chinese, Indian to European – and all the festive
flavours.

At level
11, another delectable buffet dubbed Feast@11th features The Best of
Malaysian Favourites with live-cooking and serving stations for Assam Pedas, Satay, traditional soups, Nasi
Kawah and even La Mian or pulled noodles.
The comforting
taste of hot soup can be savoured with meat choices of oxtail, beef, lamb or
chicken. Or try smooth Beijing-style pulled noodles in beef or chicken broth.
Look out
for other live-serving stations for Roasted Lamb and Braised Short Ribs.
Seafood-on-ice at Feast@11th |
Don’t be
surprised at the refreshing treat of Seafood-on-ice where chilled prawns,
oysters, mussels, scallops and blue crabs are savoured with fresh lemon slices
and sauces.
To
complement the meat dishes, there is a range of salads, both local and
international, matched with a selection of sambal
sauces and dressings.
From Kerabu to fresh garden salads, mix and
toss up a refreshing choice. Or just enjoy favourite flavours in fruit rojak and vegetable Gado-Gado.
Among the
desserts that have grown popular during Ramadan are fried durian fritters.
These fragrant fritters are freshly served here along with curry-puffs, samosas
and popia or spring rolls.
Appetites
are awakened with juicy kurma or
dates, fresh fruits and mouth-watering fruit pickles. Then choose from Malay
kueh, Raya cookies to assorted French pastries, ice-kacang and yogurt ice-cream,
to end your meal sweetly.
